Polvilho Azedo is the fermented manioc pulp that is made into starch. This starch is slightly sourish, strongly aromatic and is more commonly used in savory recipes such as pão de queijo (cheese bread) because of its distinctive slightly gummy texture. It is gluten-free and can be used in combination with other flours to make a gluten-free baking mix.
